Spiced Cranberry & Oat Cookies

Ingredients:
140g butter
175g flour + 1 tsp baking powder
175g soft brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
pinch of salt
1 egg
1 dessert spoon milk
85g rolled oats
50g walnuts / pecans
120g cranberries
2 x 30cm baking trays
Method:
Preheat the oven to 175°C, and line 2 x 30cm baking trays with greaseproof paper.
In a large mixing bowl, rub together the flour and butter to form a crumb.
Add the oats, sugar, spices, salt, nuts & cranberries and stir together using a wooden spoon.
Using the spoon, make a 'well' in the centre of the mixture and crack the egg into that 'well'. Gently mix the egg into the other ingredients to form a dough; add a splash of milk if needed to help combine the dry ingredients. You can use your hands to do this.
Shape the mixture into approx. 18 round balls, roughly a dessert spoon of mixture each, and place on prepared baking tray.
Flatten using the palm of your hand to form thick round discs. Bake in oven for 12 minutes until golden on top and still slightly soft. Cookies will harden further as the cool. Once cooked, remove from the tray and cool on a wire cooling rack. Enjoy warm with a glass of milk or hot drink!
