Spiced Salmon Burgers with Cajun Sweet Potato "Fries" & Sweet Chilli Mayo

Serves: 4 Prep time: 25 mins Cooking time: 40 mins

Cajun Sweet Potato "Fries":

Prep time: 10 minutes

Cooking time: 35-40 minutes 

Ingredients: 3 large sweet potatoes 1 tsp. cajun spice mix 1/2 tsp smoked paprika 1/2 tsp. cayenne pepper 1/2 tsp. chilli flakes (optional) 4 sprigs fresh rosemary, leaves roughly chopped 1 tsp. sea salt 1-2 tbsp. coconut oil

Method:

  • Rinse and scrub sweet potatoes clean using a vegetable brush. Chop in half horizontally and then into long skinny "fries".

  • Transfer potatoes to a large baking tray and sprinkle with paprika, Cayenne, rosemary and chilli flakes (if desired).

  • Toss to ensure evenly covered in spice mix. Season with salt and pepper and toss again to coat.

  • Place coconut oil in small blobs evenly over tray, and put in to preheated oven. Toss after a few minutes to coat potatoes in melted oil. Continue to roast for approx. 35 minutes until crispy and brown on the outside and soft in the middle. Turning regularly.

  • Meanwhile, prepare and cook burgers and sauce - see below. Remove from oven, and serve with burgers!



Spiced Salmon Burgers: Prep time: 10 minutes  

Cooking time: 6-8 minutes (approx.)


Ingredients: 4 salmon fillets 4 spring onions, finely chopped 1 large garlic clove 1/2 inch piece of ginger, crushed 3/4 tsp Chinese five spice powder 1/2 tsp sea salt 2 tbsp soy sauce 1 dessert spoon coconut oil, for frying

For garnish: Iceberg lettuce Sliced tomatoes

Method:

  • Place salmon fillets in freezer to cool for 10 minutes, this helps to process the salmon.

  • Meanwhile, prepare the sweet chilli mayo.

  • Remove salmon from freezer, and remove skins using a large knife in a vertical action.

  • Roughly chop fillets into chunks and place in food processor, 1 fillet at at time. Process until well-minced but not puréed (for about 10 seconds). Continue process with each fillet.

  • Transfer salmon to a large mixing bowl.

  • Add remaining ingredients to processor, and process until blended together. Then add to salmon in mixing bowl and combine the two mixtures together using a fork or your hands. Until thoroughly mixed.

  • Shape mixture into 4 even-sized patties and fry in pan or skillet greased with approx. a dessert spoon of coconut oil. Cook for approx. 3-4 minutes on each side, until browned cooked through. 

  • Serve in buns, with garnish, sweet chilli mayo, and sweet potato "fries".


Sweet Chilli Mayo:

Prep time: 5 minutes

Ingredients: 3 tbsp mayo 2 tbsp chilli jam/sweet chilli sauce

1 dessert spoon ketchup 1/4 tsp cayenne pepper (optional)

1/4 tsp cajun spice (optional)

Method:

  • Combine all ingredients in small bowl and mix together with a fork until smooth and blended.

  • Season with salt and pepper as desired.
