Baked Plums with Orange, Honey & Pistachios

Cooking time: 25 minutes
Ingredients:
1 punnet of fresh plums (I used greengages here)
50g pistachios, roughly chopped
2 tbsp honey
1 tsp vanilla essence
1/2 tsp nutmeg
1 large orange
Vanilla ice cream to serve
Method:
Preheat oven to 200°C.
Wash and halve plums, removing the stones & place in large baking tray.
Grate the zest from the orange, and evenly sprinkle on top of plums.
Slice orange in half and drizzle the juice from one half of the orange on top of the plums.
Top with a 1 tbsp drizzle of honey, the vanilla essence & nutmeg and bake in oven for approximately 20 minutes.
After 20 minutes, add the chopped pistachios and bake for a further 5 minutes.
Serve warm with vanilla ice cream or cool the next day. Will keep for 3-4 days in the fridge. Also great with yoghurt and granola for breakfast!
