Baked Plums with Orange, Honey & Pistachios

Serves:

Prep time: 5 minutes 

Cooking time: 25 minutes 


Ingredients:

1 punnet of fresh plums (I used greengages here)

50g pistachios, roughly chopped

2 tbsp honey

1 tsp vanilla essence 

1/2 tsp nutmeg 

1 large orange 

Vanilla ice cream to serve 


Method:

  • Preheat oven to 200°C. 

  • Wash and halve plums, removing the stones & place in large baking tray. 

  • Grate the zest from the orange, and evenly sprinkle on top of plums. 

  • Slice orange in half and drizzle the juice from one half of the orange on top of the plums.

  • Top with a 1 tbsp drizzle of honey, the vanilla essence & nutmeg and bake in oven for approximately 20 minutes. 

  • After 20 minutes, add the chopped pistachios and bake for a further 5 minutes. 

  • Serve warm with vanilla ice cream or cool the next day. Will keep for 3-4 days in the fridge. Also great with yoghurt and granola for breakfast!​
