Caramelized Rum & Coconut Bananas

Serves: 2

Cooking time: 6 minutes
Ingredients:
2 ripe bananas
3 tbsp soft brown sugar
1.5 tbsp butter
2 tbsp desiccated coconut
1 tbsp rum
Method:
Heat the butter and sugar in a heavy based frying pan on a low heat for 2-3 minutes, until the sugar dissolves and starts to bubble.
Meanwhile, slice the bananas in half horizontally and then vertically to form quarter strips.
Once the sugar starts to bubble add the bananas to the pan, and sprinkle half of the desiccated coconut on top. Simmer for another 2 minutes or so, flip the bananas & sprinkle the remaining coconut on the other sides. Cook for a further minute.
Remove from the heat, add the rum, and gently stir in to form a syrup. Serve with pancakes or french toast for brunch, or vanilla ice cream for dessert!
