Caramelized Rum & Coconut Bananas

Serves:

Prep time: 2 minutes 

Cooking time: 6 minutes 


Ingredients:

2 ripe bananas 

3 tbsp soft brown sugar 

1.5 tbsp butter 

2 tbsp desiccated coconut 

1 tbsp rum 


Method:

  • Heat the butter and sugar in a heavy based frying pan on a low heat for 2-3 minutes, until the sugar dissolves and starts to bubble.

  • Meanwhile, slice the bananas in half horizontally and then vertically to form quarter strips.  

  • Once the sugar starts to bubble add the bananas to the pan, and sprinkle half of the desiccated coconut on top. Simmer for another 2 minutes or so, flip the bananas & sprinkle the remaining coconut on the other sides. Cook for a further minute. 

  • Remove from the heat, add the rum, and gently stir in to form a syrup. Serve with pancakes or french toast for brunch, or vanilla ice cream for dessert!
