Milk Chocolate & Oat Cookies

Recipe from 200 South Street Inn, Charlottesville, Virginia. 


Serves: Makes 18 cookies (approx.)

Prep time: 10 minutes Cooking time: 12-15 minutes (approx.)


Ingredients: 250g plain flour 1 tsp baking soda 1/2 tsp salt 100g granulated sugar 250g soft brown sugar 225g butter, softened 2 eggs 1 tsp vanilla essence 1 tbsp milk 200g old-fashioned oats 350g milk chocolate chips 125g walnuts, roughly chopped (optional) 


Method:

  • Preheat oven to 180°C, and line 2 large baking trays with greaseproof paper.

  • Measure out the flour, baking powder & salt in a small mixing bowl.

  • In a large mixing bowl, using an electric mixer or wooden spoon beat togther the butter, sugar and vanilla essence until smooth and creamy.

  • Add eggs and milk, and beat throughly until combined throughout.

  • Gradually add the flour mixture to the large mixing bowl, and fold into the mixture until a smooth even dough starts to form.

  • Slowly add the chocolate chips, chopped walnuts (if desired) & oats to mixture and stir until fully combined.

  • Cover and place the cookie dough in fridge to cool for at least 1 hour.

  • Remove dough from fridge, and using roughly a tbsp of dough per cookie shape into balls on prepared trays. Using the palm of your hand gently press top of dough balls to flatten slightly. Bake in preheated oven for 12-15 minutes, until slightly browned on top. Note: cookies will remain soft and harden once cooled.

  • Remove from oven and cool on wire rack. Enjoy warm or cold with a glass of milk or hot drink!
